An unusual object for the XIXth century, not very well known, revisited by M.W.T. The hollow core skewer permits heat to rise up through the interior cavity of the bird, cooking it slowly inside out. Juices run down during the cooking process, encouraging evenly browned crisp skin. The durable stoneware retains heat well and allows vegetables to caramelize and develop a rich flavor with collected drippings. Each piece is unique as they are all shaped and enameled by hand.

MATERIAL
The chicken cooker is made from a unique grey clay which is a mixture of natural organic materials which are only found in France.The special enamel used does not contain either lead or cadmium , and this guarantees safe use in all kinds of food preparation and cooking. ( EEC directive 2005/31/CE). Firing of the stoneware dish is carried out at a high temperature , 1250 degrees, at which temperature the enamel becomes water tight, stable and impervious to any cooking juices.
CARE & USE
Place on bottom rack of oven for ample room, and promote even cooking. Allow cooker to cool before handwashing to prevent shocking the material.
